Ashby Inn & Restaurant's Green Initiative
At The Ashby a number of efforts are made to minimize our impact on the environment and be responsible stewards in the community. The Ashby uses post-consumer recycled and compostable content materials for items like printer paper and to-go containers. Paper, plastic and glass are recycled as is our fryer oil. A commitment has been made to our local farmers to support them by changing our menu in concert with what they can provide. This practice contributes to sustainable operations that benefit the local economy and environment and minimize the distance the food we serve must travel. Organic wastes generated from our kitchen and landscaping are composted for use on the property. Seeking to minimize the impact on the soil from our drainage fields, we have shifted away from petroleum-based soaps and bath products and have collaborated with Greenwich Bay Trading Co to create a line of all natural amenities that are beneficial for both the body and the environment. The Ashby has also lent its time and resources to support efforts like the Valley Earth Fest. We believe these efforts are not only important, but enrich the experience our guests have when they stay or dine at The Ashby.
